You often find pink pepper cured in brine or vinegar which I think overwhelms the flavour and dulls the colour. If you do buy the brine-cured berries check the label to make sure they are not true red peppercorns (Piper nigrum).

For the best colour and flavour look for organic freeze-dried berries, easily recognisable by the brittle skin. Being slightly soft and naturally oily, dried berries tend to clog the pepper mill, so they are better crushed with a mortar and pestle or the blade of a large knife. Keep them in an airtight container away from heat and light.
