Unlike salt, pepper has not yet received bad press from the nutritional experts. Within reason we can use as much or as little of it as we want without risk of high blood pressure, heart disease, nutritional deficiency and so on. Yet, as we reach for the pepper mill and ‘season to taste’, how many of us are aware of the part pepper has played, and continues to play, in contributing to our well-being and good health?
