Cubeb Indonesia Less red than Madagascan. Strong nutmeg flavour. Bitter. Mildly pungent.
Grains of Paradise West Africa Glossy terracotta pyramid-shaped grains. Lovely sweetish coconut aroma when ground – like Bounty Bars. Warm chocolate, nutmeg flavour. Biting on the tongue.
Long pepper Indonesia Sweet spicy aroma, like dried ginger. Good peppery bite on the tongue.
Pink pepper (Schinus terebinthifolius) Isle of Réunion Sticky and resinous when ground. Distinct floral resinous taste, with hint of turpentine.
Red pepper, freeze-dried, biodynamic (Piper nigrum) Kerala, India Reddish beige colour. Strong toffee aroma with hint of acetone, sherbet, sweets. Intense warm cereal flavour at first. Becoming salty. Glowing well-rounded heat that spreads and lingers.
Sansho Japan Sweetish but also bitter and biting. Stays in the mouth. Hint of cloves and carbolic soap.
Sichuan Sichuan, China Smells of doctor’s surgery, carbolic soap. Bitter menthol taste. Tingling and numbing in the mouth, like lemon sherbet.
Tsiperifery Madagascar Brownish red when ground. Gingery aroma with hint of cloves. Complex flavour – woody, resinous, sweetish. Pungent bite.
