Indian spice blends depend very much on regional and cultural differences, as does the cuisine. However, what is common to the depth of flavour and complexity of both the cooking and the spice combinations is the principle of six basic tastes: sweet, sour, salty, spicy, bitter and astringent. A well-balanced spice blend, or a meal, will contain all six.
