In southern Europe, thanks to Arab and Greek influence, black pepper and other pungent spices are popular seasonings. However, they more often appear in traditional sauces and pastes, rather than in dry spice blends. In the north, there are surprisingly few indigenous blends in use today, considering that spices were once the mainstay of medieval European kitchens.
