Pepper found its way into the spice blends of the United States via the cuisines of Africa, the Caribbean and Europe. It is prevalent in the southeast – Louisiana, Mississippi and Alabama – where it is used in Creole and Cajun cooking. Elsewhere, pepper is used in various blends for the barbecue but tends to be somewhat overshadowed by chillies.
