The thing about stuffed stuff is that all the fillings are interchangeable. Everybody does it differently anyway. There is vast scope for experimentation, and it is rewarding. My mother-in-law rarely just stuffs one thing – she will make a range of different stuffed vegetables and leaves, sometimes all with the same filling, sometimes with different fillings but the same sauce. Although I have ranged these dishes in the snack aisle, (largely the fault of mother-in-law’s ungrateful progeny, who grumble that it is not real food and will not themselves contemplate an evening meal composed of such things) they could just as easily feature in the main course or starter sections.
