Iran only has sea at the top and bottom, and it isn’t known for its gushing rivers or profound lakes. So it should come as no surprise to learn that only inhabitants of the Caspian coast to the north and those abutting the Persian Gulf in the south truly know what to do with fish. But oh! what variety of fish there is for those lucky few. The Caspian is of course famous for being home to the sturgeon (caviar’s Mummy) – but the sturgeon has a great number of cousins, and all of them are jolly tasty. And the Gulf is just full of fish.
