Za’atar is an Arabic spice mix used classically as a seasoning for bread – chunky bread is dipped in olive oil and then into the spice. It is also great for marinades and grilling. It consists of 4 parts dried thyme, to 2 parts sumac, to 1 part sesame seeds, with salt to taste. It is readily available in Middle Eastern shops, but easy enough to make yourself.
