This chapter celebrates the joys of being a shopkeeper and having customers. These recipes are an amalgamation of ideas and conversations with my neighbours, customers and fellow local shopkeepers. One of the pleasures of living in multi-cultural London is to be able to walk along any high street and pick up weird and wonderful ingredients. A lot of our favourite recipes were originally ingredient-driven, derived from having purchased a particular product on spec. and needing to devise something to do with it. I have been careful, however, to make sure that none of the ingredients are so outlandish as not to be either widely available or easily substituted by something else.
