Sometimes when people try the pies at Petee’s, they can’t quite put their finger on what makes them so delicious, and (surprise!) I think it often comes down to the quality of the ingredients we use. I use milk, butter, and cream from a local dairy called Ronnybrook Farm Dairy in most of the pies I make because the products are high quality, have traveled fewer miles to get to me, and taste damn good. This is especially important for a straightforward custard pie, where the ingredients are so simple and so few.
