When sourcing ingredients for pies, whether for Petee’s or in my kitchen at home, I abide by the same general rule: Keep it local, seasonal, and/or very special. Any combination of these descriptors can be applied to the majority of the ingredients I use. If you are in a position to do the same, by engaging thoughtfully with the food at your local farmers’ market, at your neighborhood grocery store, and even in some of the wild spaces hidden in plain sight, you will get an even greater satisfaction from your pie-making endeavors.
