To my partner and darling wife Jenny, who has been a constant support for the past thirty years, and my children Jacqui and Matthew, son-in-law Haydn and granddaughter Marley. To my co-authors Grant and Katrina, whose dedication, passion and drive to constantly change and invent new dishes inspire me on a daily basis.
