To my partner and darling wife Jenny, who has been a constant support for the past thirty years, and my children Jacqui and Matthew, son-in-law Haydn and granddaughter Marley. A particular thank-you to Jacqui for the wonderful design and refurbishment of Pier, which incorporated the new Tasting Room in 2005. Thanks, too, to my mother and father, Des and Clare Doyle. I also wish to thank Steve Hodges, who helped me start Pier. His talent, commitment and dedication were greatly appreciated. To my co-authors Grant and Katrina, whose dedication, passion and drive to constantly change and invent new dishes inspire me on a daily basis. They give a major portion of their lives to Pier and their commitment is unquestionable. I feel very fortunate to have two of the most talented chefs in Australia working at Pier.
