Louisiana is the place where these Creole dumplings were created. There are two types of cuisine that run through Louisiana and I’m still trying to understand all the nuanced differences. There is Cajun cuisine and Creole cuisine. Although these terms have become interchangeable in a global sense, in Louisiana, they are not the same. Locals use a simple definition to differentiate them. Creole cuisine is ‘city food’ and Cajun cuisine is ‘country food’. These street-food dumplings are at the heart of Creole city food.
