  • One big mug of rice serves four hungry adults.
  • Don’t worry if you get a burnt crust on the bottom of the pan. In many countries, this is considered the best bit.
  • If you agree and you want a burnt crust on the bottom, put the pan on a damp towel once the rice is cooked to help lift the crust off the pan.
  • Avoid stirring the rice too much while it is cooking. This breaks the grains, releases starch and makes the rice sticky.
  • Finished basmati rice should be as white as snow, smell a little of musk and have a slightly chalky interior.
