This is my aunt’s favoured method, and she is evangelical about cooking rice like this. ‘It involves Pyrex, it’s hands free – what’s not to like?’ she gushes. ‘The fact that it is your idea,’ says my mum.
- Use 2 cups of water for every cup of rinsed rice.
- Put in a large covered dish suitable for the microwave.
- Microwave in a 700watt oven until the grains stand dry and vertical, allowing 15 minutes per cup of rice.
- Remove and leave to rest for 5 crucial more minutes.
