Bad news first: You can’t make Neapolitan, Neo-Neapolitan, or whatever you want to call it in your home oven. Sorry, not gonna happen. You can hack your oven to get it hotter than it was made to, but you still won’t be close to the 700°F (371°C) floor and 1,000°F (538°C) dome temperatures of a Neapolitan-style wood oven.

Sorry. YouTube lied. Other cookbooks lied. I’m not going to lie to you. Let’s move on.
