The Associazione Verace Pizza Napoletana (True Neapolitan Pizza Association, or AVPN) is a nonprofit founded in Naples in 1984 to protect Verace Pizza Napoletana (“true Neapolitan pizza”), or VNP in Italy and worldwide. To be Vera Pizza Napoletana, pizza must be made according to the AVPN’s regulations for obtaining a collective brand mark by a pizzeria that pays annual AVPN dues. It specifies rules around the type of flour, salt, tomatoes, cheese, olive oil, and yeast; pH and temperature of the water; pizza height and diameter; the amounts of ingredients; length of time mixing, rising, and cooking; and surface and dome temperatures.
