It’s not the water.
That’s the first thing people ask when it comes to the “secret” of New York City pizza.
But before we go further, the first thing I let them know is there’s not that much great pizza in New York City.

I know. Sacrilege. But listen. Forget about it being the “birthplace of pizza in America.” Which, by the way, is debatable. New York City is known for pizza because of the sheer number of pizzerias. But if you look at the number of pizzerias versus the amount of great pizza ... eh. Collectively, New York City isn’t doing great.
