I started calling myself an international pizza consultant in 2017, after my first job consulting on pizza outside of America. But I didn’t feel like one until I went to Tokyo.

I’d always wanted to go to Japan. I grew up in the ’80s and ’90s, and my whole life I’ve been into samurai, ninjas, and video games. I’d heard of Tokyo-style pizza but never had it. So I was excited when Abdullah Al Khabbaz, a new client, reached out about Tokyo-style pizza he wanted to do in Kuwait. Abdullah owns a restaurant management company called Nejoud with restaurants and coffee shops in Kuwait, Saudi Arabia, Bahrain, Qatar, and the Emirates. Working with professionals means I’ll look good when the project succeeds after I’m gone.
