I stirred up controversy in the pizza world in 2018 while cooking pizza at Feast Portland, an amazing annual Pacific Northwest food festival in Portland, Oregon. Food is great all along the West Coast but especially delicious in the Pacific Northwest. Portland is special among West Coast cities because it has one of the best pizza cultures in America.
Portland is the intersection of pizza greatness: wheat grown and milled in the Pacific Northwest and terrific produce grown year-round in a Mediterranean climate. Cooking in Portland is like what I’d imagine it’s like to cook in the Mediterranean, with farmers and millers who care about food and food systems. Because of this, the food is great. I get excited about cooking with great product. I tried to explain this to a journalist and it got me into trouble.
