Pineapple pizza wasn’t something I was ever into or passionately against. Just something other people did. Fast-forward to Toronto in 2018 when my client Ali Khan Lalani asked me to come up with one.

If you don’t know, “Hawaiian” pizza was first popularized in 1962 by Sam Panopoulos, a Greek immigrant who owned restaurants in Ontario. He’s the “evil mastermind” who hooked Canadians on the ham and pineapple combination. When you look at pizza menus in Canada, Hawaiian is up there with pepperoni and supreme as most popular.
