Eggplant is an example of a seasonal ingredient that you don’t want to try to reinvent the wheel with. Italians have had their hands on eggplant for a while and have done fantastic work with it. As a Sicilian-American, eggplant is a thing. You probably recognize a few renowned dishes: caponata, eggplant Parmigiana, and pasta alla Norma—great dishes.
The first eggplant pizza I put on a menu was a simple translation from a pasta I had in Sicily. Taking a tried-and-true pasta and translating it to pizza is a great trick. Pasta alla Norma is a dish that seems simple but is also mind-blowing. I came to understand it with this eggplant pizza.
