I started making my Thin & Crispy dough after a client told me their favorite style was New Jersey thin and crispy bar-style pizza and they hired me to recreate it. The partners behind Uptown Social—Keith Benjamin, Kara Graves, and Jonathan Arzt—wanted to open something in that style in Charleston, South Carolina. Specifically, they sent me to Star Tavern in Orange, New Jersey, an hour’s drive west of Manhattan (Keith grew up going there). I loved the vibe. Star Tavern has been owned and operated by the Vayianos family since 1980. It has classic wooden booths, a long bar with old-school beer signs above it, and even some arcade games.
