Soy is definitely a loaded topic—one I’m not going to tackle it its entirety. Whole books and associations are dedicated to soy and its impact on our health. From hormone imbalance to genetically modified organisms (GMO) to estrogen sensitive cancers, there’s still disagreement. After working in cancer care as a pharmacist, after reading endless articles about soy and its impacts on health, after living and cooking in different countries and getting familiar with other culinary traditions, I choose to include minimally processed, organic soy products in my diet. If you also use soy products, I suggest always buying organic and non-GMO. I don’t use processed soy foods or soy spinoffs like textured vegetable protein, soy cream cheese, soy bacon, sausages, or burgers. Here are the soy products in my kitchen.
