Veggie-forward soups are an easy way to upgrade your diet and consume more nutrients. Like salads, soups allow you to mix any veggies, spices, beans, or grains—they’re easy, breezy, and forgiving.

Although soups are easy to make, it’s important to choose a quality vegetable broth, make your own, or even use water (with adjusted spices and seasoning). I use my no-salt added Homemade Vegetable Broth in all the recipes in this book. If you use premade vegetable broth, be aware of its sodium content and adjust salt accordingly for each recipe.
