I’m not militant about only eating local seasonal foods, but giving seasonal foods more focus has been a great way for me to connect to the land around me, to connect to nature and to make recipes more cost-effective too. A lot of my recipes were created when I lived in the jungle, using only what was in season there. Imported ingredients were a rarity, so sourcing local seasonal produce was essential. These recipes have evolved to be a fusion of fruit, vegetables and nuts from faraway lands, along with my much-loved ingredients from here in the UK.
