India is a country of more than one billion inhabitants, and it aptly has a vast array of different cuisines. The starters and lighter meals in this chapter draw inspiration from regions all across the country. They are divided into four categories: North Indian, Gujarāti, South Indian, and Indo-Chinese & Indo-Western. You’ll find more details in the individual recipe headnotes. It’s also worth noting that the recipes are inspired by these four regions, but they do not represent the entire range of each regional cuisine as a whole.
