In most cases, the recipe titles are in a combination of English, Gujarāti, and Hindi. Occasionally, another language will be included. This reflects the habit of naming dishes the way we do in our own Indian American household, by combining languages. The headnotes explain the titles in more detail when clarification is needed. When it comes to non-English words, italicizing can be a colonizing tactic used to further foreignize and exoticize these words. For this reason, I have very consciously flouted this “convention” and decided not to italicize Gujarāti, Hindi, and other non-English words. In addition, to assist with the pronunciation of the Gujarāti and Hindi words, I’ve added the diacritical mark “ā” to denote a long “ah” sound; “a” denotes an “uh” sound.
