To remove the brown skin from almonds, pour boiling water over the nuts, cover, and let them soak for 5 minutes. Drain the water and immediately pinch the almonds between your fingers to remove the skin. Another method is to place the almonds in a saucepan and add enough water to cover. Bring to a boil and simmer for 3 minutes. Strain off the water and remove the skin immediately. With both methods, do not forget and leave the almonds sitting in the water too long; the skin could stain the almond meat and turn it brownish.
