Before starting production, you must read the entire recipe carefully and completely. The following are some of the tasks you must do as you read the recipe and get ready for production. Chefs call these advance preparations their mise en place (meeze on plahss; French for “put in place”). A good mise en place is essential for efficient operation of a bakeshop or kitchen.
