Most soups can be divided into two basic categories: clear or unthickened soups and thick soups. In addition, this chapter discusses a number of special soups that don't fit easily into these first two categories.

Most of these soups, no matter what their final ingredients may be, are based on stock. Thus, the quality of the soup depends on the stock-making skills discussed in Chapter 8.
