  • About
  1. Whites should be set and milky-looking, with no part of the white still liquid.
  2. Unless the customer requests them otherwise, yolks should be barely set, still partly liquid.
  3. Additional ingredients should be in appropriate proportion to the egg, enough to add a pleasing flavor component but not so much as to overwhelm the egg.
