People who are allergic to gluten develop an ailment called celiac disease if they consume this allergen. Gluten is the main protein component in wheat, and it is present not only in wheat but also in rye and barley. In addition, these other grain products contain gluten: triticale, spelt, kamut, bulgur, semolina, farina, couscous, and matzo. Processed grain-based products including, of course, breads, crackers, and other baked goods, pasta, seitan, and some meat substitutes contain gluten. Ingredients containing gluten are also used in a great range of prepared foods, so it is important to read labels carefully.
