Two components of milk present problems to some people. Lactose, a type of sugar naturally found in milk, cannot be digested by people with lactose intolerance. These people can develop severe digestive problems if they consume lactose. One of the proteins found in milk, called casein, can cause serious illness in people who are allergic to it, and so they must avoid eating dairy products and any prepared food that contains dairy.

Do not use any dairy products, including butter, cheese, yogurt, and ice cream, when preparing foods for dairy-free diets. Substitute dairy-free ingredients such as vegetable oil in place of butter.
