Sodium is a major component of table salt. It is not an allergen, but consuming too much salt can lead to health problems such as high blood pressure and other heart ailments, as well as kidney disease. Salt is, of course, an important ingredient for enhancing the flavor of all the foods we prepare. For healthful diets it is important to rely more on other flavor-enhancing ingredients such as herbs and spices, acidic ingredients such as lemon juice and vinegar, and flavorful ingredients like onions and garlic. Foods that naturally contain large amounts of salt, such as cured and smoked meats and seafood, should be avoided.
