  • About
  1. Scale dough to 16–20 ounces (450–560 g) per dozen.
  2. Make up and pan as shown in Figure 32.12.

    (a) Divide each piece of dough into 3 equal parts. Shape into balls. Place 3 balls in the bottom of each greased muffin tin.

    (b) The baked roll has this appearance.
