Poached fruit can be made well in advance and then served rewarmed or fridge-cold. Because of this, I always make at least twice as many apples as I think I’ll need. They keep for a long time (upwards of a week) in the fridge and go with just about everything. I’ve used sweet cider in all of these recipes because I like the flavor, but you could easily swap hard cider or dry white wine and stir in a ¼ cup [50 g] of sugar or a ¼ cup [85 g] of honey.
