Like most fruits, ground cherries benefit from being roasted hot and fast in a blazing pan with enough space to evaporate the released juices. They also break down into a syrupy sauce when roasted at a lower temperature to trap the steam. Not better or worse—just a different end result. For ease of preparation, both of the following recipes utilize an already hot oven to roast the fruit.
