While I grill peaches that are too hard, I tend to bake peaches that have gone a bit soft. Grilling benefits from the structure of an underripe peach. Baking renders peaches tender to the point of a quiver. That said, you will always have to account for the juiciness. Both of these recipes involve a dough that can handle a good amount of peach nectar. If you are making something like a pie that can become soggy with too much juice, be sure to add a thickener like cornstarch or go the way of the Pie Filling to remove and reduce the liquid separately.
