In its essence, roasting achieves two things: 1) It removes excess water from the ingredient, thus concentrating the flavor, and 2) it caramelizes the inherent sugar within the ingredient, creating depth of flavor. Both help less-than-stellar strawberries along. The key to roasting strawberries is a screaming-hot pan, which helps sear the outside of the fruit before all the juice releases.
