Someone once scoffed at my reticence to preserve strawberries, saying, “They are strawberries! It’s not like they’re lettuce!” But despite the ubiquity of strawberry jelly, I find strawberries the least satisfying fruit to preserve, second only to melon, because they are watery and lack the acidity to not be cloyingly sweet.
