Tart round fruits are great candidates for preserving for several reasons. Their seasons tend to be short, so preserving keeps them in more regular rotation. They are self-contained (unlike, say, a melon), so they freeze well. They often contain a good deal of pectin and so do well as jams and jellies. They also dehydrate well because they aren’t the juiciest of fruit and they are small enough to dry down quickly.
