First and foremost I have to thank my wonderful wife Kath. Without her support this book would not have been possible. Kath is my scribe and has worked on this book by my side.

My deepest gratitude goes to Leon Fink, the owner of Quay restaurant. Leon has been in the restaurant business for over 30 years and started Quay 22 years ago. I wouldn’t be where I am today without his trust and support. John Fink joined the team at Quay as General Manager 3 years ago and has brought energy, passion and enthusiasm to the role. He has inspired and supported the Quay team to push the boundaries in fine dining in Australia. John has been a huge supporter of this book and was instrumental at the beginning of the process with Jane Lawson.
