Stir-frying is a compound word, and both words count. Note that while you can stir like crazy when that action is called for, the frying part is a job to be handled entirely by the stove, the pan, and the food. Scoop, turn, toss, and stir a bit, but then let the frying take place while you watch. If you are working all the time, you are working too hard. Wait your turn. Stir and let fry, stir and let fry. Stir only for a reason: to mix in, turn over, increase browning, prevent burning, whatever the food needs you to do.
