Children brought up in Western consumer societies are so far removed from the reality of food production they may be forgiven for believing that milk starts its life in a carton and has nothing to do with cows. In its own way, chocolate is another foodstuff the origins of which are shrouded in mystery. We’ll never know who first decided to eat this fruit, or who transformed it into ‘cacao’ or cocoa, but I will try to demystify the process that transforms it into slabs of eating chocolate.
