Now you know the difference between ‘real’ and ‘fast’ chocolate, put your knowledge to the test with my unique Five Senses Chocolate Test. It’s a fun thing to do with friends and will get you thinking about chocolate as never before. Start with four or five bars of dark chocolate, selecting ones with a range of cocoa solids content from 30–70%. Test the chocolate with 70% cocoa solids first, then move down the scale. You need to start with a clean palate, so have a drink of water. Too much sugar or salt interferes with the tasting, as do strong flavours like peppermint or chilli.
