The following is a listing of some reliable sources of food, wine, and equipment available to readers of this book. I have also included many sources in Liguria, for two reasons. The first is that I hope you will go there at the earliest possible moment. It is a place I love, and I trust you will, too. Moreover, when you sample the flavors of Liguria in situ, you will acquire what I call touchstone tastes, those that you will use as a point of reference when you cook at home. But these sources are also listed for the benefit of importers of food, wine, and housewares, so that they can bring these products home to you. (Note: When calling or faxing from outside of Italy, remember to use the country code [39] and to drop the first zero in the Italian phone number. So a call to Genoa from the United States would begin 011-39-10.)
