While you should have no problem finding unbleached, all-purpose wheat flour in your local markets, others may take more looking. Chickpea flour is found in many Middle Eastern stores, while chestnut flour and spelt (farro) are really only found at excellent gourmet shops, including those listed under Leading Food Purveyors. Here are some flour suppliers you may want to know about. Some will sell directly to you; others will tell you where you can buy their products in your area.
