While it is possible to find dried funghi porcini from Italy from any of the leading food purveyors I indicate above, with Ligurian mushrooms there is also the possibility of getting them packed in either oil or vinegar. While the latter have a distinct taste that does not lend itself readily to most prepared dishes (although it is wonderful with poached fish), oil-packed Ligurian mushrooms are versatile and delicious.
